Ingredients

  1. For stock :
  2. 12Mutton trotters /paye with bong
  3. 2_3,tez patta
  4. 8_10 laung /cloves
  5. 8_10 black pepper corns
  6. 6_7 green illichi
  7. 2bari ilaichi
  8. 1 tsphaldi
  9. 1 tspsalt
  10. 2 tspginger and garlic paste
  11. Masala for salan:
  12. 4onions big sliced
  13. 1 tbspGinger garlic paste
  14. 4_6green ilaichi
  15. 2 tspZeera white
  16. 2bari ilaichi danay /seeds
  17. 2 tspred chilli powder
  18. 1/2 tsphaldi
  19. 2 tbspdhania powder
  20. 1tez patta
  21. 1 tsp/according to taste
  22. 1 tspgaram masala powder
  23. 1 cupDahi
  24. Lemon for garnishing
  25. Green chillies chopped
  26. Dhania chopped
  27. 2 cupsghee /oil

Steps

  1. 1

    Wash paye very well than put in a deep pot with 1_1/2 to 2litre water, add all its ingredients for 1_2hrs or till soft n tender and water reduced to half quantity.when boil comes remove scum from top.

    When trotters /paye gal jaen and nice stock is ready make its gravy.

    In a pot add oil or ghee fry onions to golden brown and take out, than add tez patta, ginger garlic paste and fry with little water add red chilli powder, dhanya powder masala ko bht acha bhunai karen pani thora thora dal ke.

    In dahi add brown onions
    Save some for topping. Blend it and add in pot again fry well, now strain paye from stock and again bhun lein achi tarha than add stock strain kar ke and add grinded masala n cook on low flame for 40 _60 mins. If required add warm water. Keep shorba according to need. In the end when ready sprinkle garam masala.

    Serve hot with naan, lemon, ginger julieline and dhania
