Misal Paav is the pride of Kolhapuri and Khandeshi cuisine of Maharashtra. This combination dish a curry of sprouted lentils spiced with special masalas and curry pastes served with Fresh soft buns called paav garnished with chopped onions, savoury mixture called farsan. Enjoyed with lemon, chhas (buttermilk )and some sweet chai at the end!
I have prepared an Oil Free and Ghee Free version of Misal for the diet conscious foodies! Healthy and tasty too!

First, pressure cook the sprouted moong and moth with 1/2 tsp salt, 1/2 tsp turmeric powder in 1 cup water for 5 whistles. Cool completely and remove.

Then heat a heavy iron kadhai. Add 1/2 cup warm water. Add mustard, hing and let it boil well. Add onions, ginger garlic paste and saute well Then add the chillii, coconut paste and saute well.

When the paste starts giving aroma, add the tomatoes and fry well. Add all the spices and mix well. Add some water and cover. Cook for 5 minutes.

Then add the cooked beans and mix well. Add salt, jaggery and cook for 5 minutes. Mash with back of spoon or potato masher for thickness. Then remove and add lemon juice. Adjust the seasonings and spices as per your taste.

Serve immediately accompanied by Laadi Paav, lemon and onion slices.
Tip 1 :-Garnish with chopped onions, avoid adding fried farsan, sev etc as this is a diet recipe.
Tip 2:- I have neither used ghee nor oil in this recipe. Very good for weight management.
Tip 3,:- You can add a small boiled and mashed potato for thickness.
