Yakhni Pulao Recipe (Beef-Mutton)

Beef yakhni pulao is wonderful pulao recipe in which rice cooked in beef stock. On Eid-ul-Adha Pakistani people love to make it with fresh meat and it tastes really good when cooked with fresh meat. You can also make it with lamb/goat meat. I am giving here my mom’s recipe of Beef Yakhni Pulao. This dish is in my childhood memories when She made it sooooooooo good and I can’t stop eating this lovely yakhni pulao with yogurt dip. Here I am trying to make it exactly like her 🙂

Yakhni Pulao Recipe (Beef-Mutton)

Combine all the yakhni ingredients along with 5 glass of water in your pressure cooker. Stir and set on Manual for 15-18 minutes, naturally realease.

While the meat is cooking soak your rice.

When the pressure releases strain the stock to remove the whole spices. Keep the beef aside.

Heat oil in a pan.

Add the whole spices -bay leaf and fry until they crackle and you can smell the aroma.

Put the onion slices into the pan and saute until they caramelize (8 minutes or so)

Now add the garlic and ginger paste, saute for another minute. Add the chopped tomatoes and green chillies if using.

Add the coriander powder, and 1 tsp of salt Cook for another 10 (add a splash of water if it starts to burn).

Now in go the beef meat, stir for a minute so they can absorb the spices and flavor.

Add the rice and the strained stock. Adjust with additional water if your rice requires it.

Put in 2.5 tsp of salt, bring to a boil and cook partially covered until the water is more or less dry and the pulao is done. If the rice is still not cooked shut the lid and turn the heat down, keeping it on low till cooked through.

Serve with green chutney raita and salad.
