Wool Roll Bread Whole Wheat Flour

With cream cheese filling and sprinkles of walnut surprise this bread is supposed to look very complicated. But it is as simple as any bake.
This stuffed bread was on my to do list since long. It's gorgeously tasty with crunchy top and soft melt in mouth middle.

This stuffed bread was on my to do list since long. It's gorgeously tasty with crunchy top and soft melt in mouth middle.

In a bowl add milk, brown sugar and yeast. Mix with fork, cover and let sit for 10 min.

Yeast will be frothy if it's active.

Add flour, salt, milk powder and mix with fork.

Start kneading with hands and bring everything together. Apply soft butter and keep kneading.

Take the dough onto kitchen counter and knead until the it has become silky smooth. This may take 10-15 minutes.

Drizzle some oil in the bowl. Coat the dough with oil. Cover and leave the dough in warm place for first proofing.

Mean time prepare filling. Take walnuts in a mixer and pulse to coarse powder. Remove in a bowl and keep aside until use.

In same mixer add paneer, cream cheese and cheese cubes and grind to smooth paste.

Add salt and pepper. Mix well and keep in refrigerator until use.

After 1 1/2 hours the dough has risen and doubled in size. Take on the counter, deflate the air by punching the dough. Divide into 8 parts. Smoothen the balls by tucking and rolling, put them again inside the bowl and keep covered.

Grease a 7 or 8 inch pan.

Using a rolling pin, stretch the dough balls in oval shape. Make cuts in one end, like

Put cheese filling on other end.... Roll, gently lift and place in pan.
Repeat same with all balls. Cover with cling film and leave for second proofing again in a warm corner of the kitchen. - 14
After 2 hours, the wool rolls have risen more than double its size.
Drizzle some oil and bake on preheated oven @200°C for 20 minutes.

After removing from the oven, apply 2 tsp soft butter. Let cool over wire rack for 10 min. Pull apart and serve.
Delicious and wholesome Wool Roll Bread is ready.
