Steps

Firstly in a grinding jar add semolina, dry ginger, cinnamon stick, cardamom and nutmeg grind few seconds or till fine powder. If you are using powder spices then skip this step.
I personally prefer to use freshly grinde spices as they are more flavorful and pure. - 2
Chopped walnuts. Keep 2tbsp walnuts aside for garnishing.
Coat walnuts and raisins with 1tbsp wheat flour. Keep it aside. - 3
Whisk oil, jaggery and curd until it becomes smooth and fluffy.
Now sieves all remaining dry ingredients along with grinned semolina and spices. Mix everything and make a smooth lumps free batter. - 4
Add flour coated walnuts and raisins and gently fold it.
Add lemon juice in prepared batter.
Mix and immediately pour it in the greased and lined Muffin mold.
Garnish with chopped walnuts on top of Muffin. - 5
Bake it in preheated kadai for 35 - 40 minutes or you can also bake it in preheated oven under 180 degreeCelsius for 20 - 25 minutes, or(until a toothpick inserted into the centre comes out clean).

Allow Muffins to be cool completely. Serve with a cup of Coffee or tea or as it is.
