First take a small bowl add olive oil, garlic mince, lemon juice, salt and pepper and then mix this well and set it aside or keep in refrigerator.
On a grill or a grill pan, cook halloumi until sear marks are visible, about 2-3 minutes per side.

In a large bowl, or serving plate assemble, toss grilled halloumi, tomatoes, onion, mozzarella cheese in a platter. Top with fresh basil leaves, parsley and pour over the salad olive oil dressing then serve immediately.
