Ingredients

2-3 servings
  • 1/4 cupextra virgin olive oil
  • 3garlic clove minced
  • To tasteSalt and pepper
  • 1red onion cut into slices
  • As neededfresh Basil leaves
  • Some parsley
  • 1 (8 oz)block halloumi cheese, cut into ½-inch blocks
  • 1fresh mozzarella cheese ball cut into cubes
  • 1 lemonJuiced
  • 250 gheirloom tomatoes, cut in half

Steps

  1. 1

    First take a small bowl add olive oil, garlic mince, lemon juice, salt and pepper and then mix this well and set it aside or keep in refrigerator.

    On a grill or a grill pan, cook halloumi until sear marks are visible, about 2-3 minutes per side.

  2. 2

    In a large bowl, or serving plate 
assemble, toss grilled halloumi, tomatoes, onion, mozzarella cheese in a platter. Top with fresh basil leaves, parsley and pour over the salad olive oil dressing then serve immediately.
