Cocoa Pound Cake with Tofu and Banana

I wondered if I could make a delicious cake with no oil and no egg. When I bought the tofu I also bought some other ingredients that had nutrition labels displaying the calories and tried out various amounts of each to make the cake.

I recommend using a completely ripe banana. If the banana isn't completely ripe it's fine to add about 10 g of synthetic sweetener like Palsweet. This time I used a pack of tofu which was 120 g. The tofu is 70 kcal so the whole cake is about 600 kcal. Recipe by Harurabu

Ingredients

6 servings
  1. 100 gramsPancake mix
  2. 120 gramsSilken tofu (draining unnecessary)
  3. 1Banana
  4. 20 gramsCocoa powder

Cooking Instructions

    Cut some of the banana into several thin slices to be used for decoration. Add the remaining banana along with the tofu into a bowl and mash the ingredients using a hand mixer or a potato masher.

    Add the cocoa powder and pancake mix to the bowl in Step 1 and lightly mix the ingredients together.

    Pour the batter into the pound cake mold and lay the thinly sliced banana on top as a decoration.

    Bake in an oven for 25 minutes at 180℃. Done!
