Steamed Sweet Potato Buns for Snacking

My mother used to make this for me whenever we had sweet potatoes.
My kids love these and they are easy, especially since you make them ready-to-use pancake mix. I always make them whenever we get sweet potatoes.
Microwave the sweet potato and work through Steps 3 and 4 while the water boils, and they'll be done in no time!
The steamed bread is topped with unpeeled and unmixed sweet potatoes, so it has a pretty colour. Recipe by cho.
Steamed Sweet Potato Buns for Snacking

Cooking Instructions

Dice the sweet potato into 1 cm cubes. Microwave in a heatproof bowl at 500 W for 3 minutes.

Pour 1-2 cm of water into your steamer, cover with a lid and turn on the heat.

Mix the ingredients marked ★ together in a bowl.

Fill aluminium cups with the batter from Step 3 about 60% full, and top with the sweet potato from Step 1. The level of the batter will rise with the extra volume from the sweet potato and will expand when steamed.

When the water in the steamer has boiled, add the cups from Step 4 and steam on high heat for 6-7 minutes. They are done when a skewer poked through the middle comes out clean.
