I'm working on increasing the amount of raw food recipes using a dehydrator. I wanted to use a main ingredient other than nuts this time, so I made this version of raw cookies with rice as the key ingredient.

The stickiness of the cashew butter and raw honey brings the rice flour together.

Ingredients

  1. 200 gramspre-soaked in water overnight, drained, and blended in a vitamix or a mixer White rice or brown rice
  2. 40 gramsCashew butter
  3. 40 gramsRaw honey
  4. 1 tbspWhite sesame seeds

Steps

  1. 1

    Put all the ingredients in a bowl and mix them gently with a spatula.

  2. 2

    Use small ice cream scoop to shape the mixture into small cookies, and arrange them on a mesh rack.

  3. 3

    Dry them for 12 hours in a dehydrator.
