First, gather all the ingredients.

Add the chickpea flour, yogurt, salt, spices, and all other ingredients to a blender or food processor.

Add 1 cup water and blend until smooth and well combined.

Pour the batter into a nonstick pan and cook over medium heat, stirring constantly, for 5 to 7 minutes until thickened.

Turn off the heat. Immediately grease a plate lightly with oil, then spread the cooked batter evenly over the plate using a spatula. Spread a little extra spice and sauce on top, then let it cool.

Once cooled, cut the khandvi into long strips with a knife. Heat oil in a pan, add mustard seeds, curry leaves, green chilies, and sesame seeds to make the tempering.

Pour the prepared tempering over the khandvi rolls. Your famous Gujarati and Maharashtrian snack, khandvi, is ready to serve.
