Ingredients

  • 4 cupsshredded zucchini
  • 1/4 cupparmagiano reggiano
  • 1/2 cupmozzarella
  • Salt
  • 1Egg

Steps

  1. 1

    Add a pinch of salt to zucchini z and microwave for 6 minutes

  2. 2

    Squeeze out all liquid of zucchini with towel/anything.

  3. 3

    Mix with cheese and egg

  4. 4

    Spread into round thin shape.

  5. 5

    Bake at 425F for 18-20 minutes. The edges should be slightly crispy, and should be slightly bubbly with brown spots on the crust.

  6. 6

    Can freeze for storage
