Milan-style Chicken Cutlets with Basil Oil

I buy chicken frequently so I decided to change up my way of cooking them by using different seasonings.
Instead of the basil oil, you can simply use dried basil with some salt (rock salt etc.) and sprinkle them on top.
If you use extra virgin olive oil, the flavor and aroma will be fantastic once cooked, however, you can use regular vegetable oil if you'd like. Recipe by Hokkori-no

Cooking Instructions
- 1
How to make the simple coating: Beat the egg in a bowl and then add in the flour and water and mix well until no longer lumpy.
- 2
In a separate bowl combine the panko crumbs and Parmesan cheese. Finely crush it with a rolling pin (or you can put in a plastic bag and crush it that way).
- 3
How to make the basil sauce: Combine all of the basil oil ingredients into a bowl and mix well.
- 4
Take the chicken and cut it diagonally into 1 cm wide pieces. Place it in a bowl. Next add in the sake, sugar, and salt and let it marinate. This is to make the chicken tender.
- 5
Let Step 4 sit for a while and then sprinkle with salt and pepper.
- 6
Take the chicken from Step 5 and coat them with the coating from Step 1. Then coat with the cheese and panko mixture from Step 2.
- 7
Pour the 5 tablespoons of olive oil into a frying pan and heat it up. Once it's heated, add The chicken to the pan and thoroughly cook both sides.
- 8
You're going to have to fry this in separate batches, so add in olive oil as necessary to maintain the proper amount of oil needed for frying.
- 9
Once done, transfer them to a plate, and coat with the basil sauce from Step 3.
- 10

I've seen somewhere that it's nice to add parmesan cheese in the egg mixture to make Milanese chicken cutlets. So I added parmesan cheese to my usual batter - "If You're Frying, You Need This! 2 Step Simple Batter!".It's also good if you sprinkle with dried basil and salt (rock salt, etc.) instead of basil oil.I think extra virgin olive oil will make this dish more fragrant and tastier, but it's ok to use normal pure olive oil or vegetable oil. Milanese-style Cutlets Milanese-style Cutlets
I had Milanese-style cutlets at a restaurant during my vacation in Italy. I wanted to recreate that taste. At the place where I ate this, the cutlets were served without sauce. The real key to this unique flavor is the Parmesan cheese.○The butter adds its delicious flavor to the oil.○I tried to use as little oil as possible.○By further crushing the panko, the breading is similar to Milanese-style and is easier to eat.○If you add Parmesan cheese to the egg batter and the panko breading, the extra flavoring is really tasty. An Italian-Style Dish for a Change Stir-Fried Chicken with Cheese & Basil An Italian-Style Dish for a Change Stir-Fried Chicken with Cheese & Basil
The expiration date of the grated cheese was getting close, so I came up with a dish that would use a lot of it.Using olive oil instead of vegetable oil makes the dish more delicious. If you use a lot of grated cheese and basil, they can make the taste too strong and rich, so I used just a small amount here, but please feel free to add some more if you'd like. Baked Milanese-Style Crispy Cutlets Baked Milanese-Style Crispy Cutlets
Authentic cutlets usually involve frying beef or pork, but I wanted something healthy and delicious, so I decided to bake mine in the oven instead.I often use this method for the pork cutlets as well in our family. It's great because you can make a side dish while baking the meat, and this method cuts down on calories a lot.Pound on the chicken (beef or pork), and make it really thin.It makes the cutlets crispy and light. These cutlets are also quite tasty with tomato sauce or Japanese Worcestershire-style sauce. Stir-fried Chicken with Basil Stir-fried Chicken with Basil
I like Thai food and make it often for lunch.I usually make this dish with everyday ingredients.1: If you finely chop the garlic, add it at the start. If you use grated garlic, add it at the end after turning the heat off.2: Basil leaves turn black when heated, so add it at the end after turning the heat off.3: If you like fish sauce, I recommend seasoning with just nam pla and oyster sauce.
