Milan-style Chicken Cutlets with Basil Oil

I buy chicken frequently so I decided to change up my way of cooking them by using different seasonings.

Instead of the basil oil, you can simply use dried basil with some salt (rock salt etc.) and sprinkle them on top.
If you use extra virgin olive oil, the flavor and aroma will be fantastic once cooked, however, you can use regular vegetable oil if you'd like. Recipe by Hokkori-no

Ingredients

3 servings
  1. 2Chicken breasts
  2. 1 tbsp・Sake
  3. 1 tsp・Sugar
  4. 1/4 tsp・Salt
  5. 1 dashPepper
  6. 5 tbspplus the amount for frying Olive oil (or vegetable oil)
  7. Easy 2 Step Coating:
  8. 1Egg
  9. 8 tbspCake flour
  10. 5 tbspWater
  11. 400 mlPanko
  12. 2 tbspParmesan cheese
  13. Basil Oil:
  14. 2 tbspOlive oil
  15. 1 tspDried basil
  16. 1/2 tspSalt
  17. 1 pinchSugar

Cooking Instructions

    How to make the simple coating: Beat the egg in a bowl and then add in the flour and water and mix well until no longer lumpy.

    In a separate bowl combine the panko crumbs and Parmesan cheese. Finely crush it with a rolling pin (or you can put in a plastic bag and crush it that way).

    How to make the basil sauce: Combine all of the basil oil ingredients into a bowl and mix well.

    Take the chicken and cut it diagonally into 1 cm wide pieces. Place it in a bowl. Next add in the sake, sugar, and salt and let it marinate. This is to make the chicken tender.

    Let Step 4 sit for a while and then sprinkle with salt and pepper.

    Take the chicken from Step 5 and coat them with the coating from Step 1. Then coat with the cheese and panko mixture from Step 2.

    Pour the 5 tablespoons of olive oil into a frying pan and heat it up. Once it's heated, add The chicken to the pan and thoroughly cook both sides.

    You're going to have to fry this in separate batches, so add in olive oil as necessary to maintain the proper amount of oil needed for frying.

    Once done, transfer them to a plate, and coat with the basil sauce from Step 3.
