Prepare the ingredients: Wash and finely chop the leek—the finer, the better. Grate the carrot, press the garlic cloves, and grate about 1 teaspoon (3 grams) of ginger.

In a large bowl, add the ground pork and all the prepared ingredients. Mix well, then season with salt and pepper. Set the filling aside.

Prepare a bowl of warm water (about 104°F/40°C) for softening the rice paper wrappers, and set up a surface to place the moistened wrappers.

Method 1 wrapper per ravioli:
Pour the warm water into a shallow dish and dip 1 rice paper wrapper for 5 seconds—it softens quickly. Place it on your work surface and add about 2 heaping tablespoons of filling in the center. Press down gently. Fold the edges over the filling. Place the ravioli on a sheet of parchment paper to prevent sticking.

Method 2 wrappers per ravioli (for a chewier texture):
Pour the warm water into a shallow dish and dip 2 rice paper wrappers for 5 seconds—they soften quickly. Stack them, then add about 2 heaping tablespoons of filling in the center. Press down gently. Fold the edges over the filling. Place the ravioli on a sheet of parchment paper to prevent sticking.

To cook the ravioli: Add 1 teaspoon of oil to a skillet—the pork will release some fat as it cooks. Cook over medium heat for 5 minutes (for example, if your stove goes up to 9, set it to 5). For a toasted and tender finish, increase the heat at the end and sauté for 30 seconds on each side.
