Pyaz wali bhindi is a popular dry vegetable in Punjabi cuisine usually served with paratha or chawal-dal.

To begin making pyaz wali bhindi first wash bhindi with water and then pet dry with a kitchen towel. Remove the stem and cut it into small pieces with a knife.

Heat oil in a pan and add hing, bay leaf, cumin seed, and whole red chili. allow it to crackle.

Add chopped onions and saute on medium flame till softened. Add chopped bhindi and mix.

Add turmeric powder, red chili powder, coriander powder, and salt and mix. Stir until all the ingredients get well combined. Cover and keep the flame on low and let bhindi cook until it turns soft and tender.

When it gets cooked you will notice that the onions have slightly caramelized as well. Once done add amchur powder and mix. Off the flame and serve hot pyaz wali bhindi with paratha.
