Mutton Biryani With Raita

First wash and soak basmati rice for 30 minutes.

Marinate mutton in described ingredients.Leave for 15 minutes.

Heat ghee in a pressure cooker,fry sliced onion til light brown.Add mutton and 2 bay leaves.Add 1 cup water.

Cover the lid and cook for 1 whistle on high flame.Then cook 5-7minutes on medium flame or till done.Keep aside.

Now boil basmati rice in3 litres water.Add some whole garam masala and 1.5 tbsp salt.Boil till 80%.Drain and keep aside.

In a heavy bottomed vessel, add 1/3part of boiled rice,1/3part of cooked mutton.Add some coriander mint leaves and fried onions.Repeat the process 2-3times.

Dissolve food colour in 2-3tbsp milk,add kewra water andpour over the biryani.

Cover and cook on lowest flame for 10 minutes.After 10 monutes mutton biryani is ready to be served.

For raita blend curd in a bowl,add other ingredients and adjust consistency of your choice.

Serve mutton biryani with raita.
