Eggplant Chili Paste with Fermented Fish Sauce

Grill the eggplant, garlic, shallots, and Anaheim peppers until cooked. Let them cool, then peel off the skin and any charred parts.

Season with 1 tablespoon fish sauce, 1 teaspoon sugar, 2-3 tablespoons fermented fish sauce, and lime juice. Adjust the taste to your preference for saltiness, sourness, and sweetness.
