Ingredients

2 servings
  • 1eggplant
  • 2-3 clovesgarlic
  • 2-3shallots
  • 2-3Anaheim peppers
  • 3-4fresh chili peppers
  • lime juice
  • 2-3 tablespoonsfermented fish sauce
  • 1 teaspoonpalm sugar
  • salt
  • 1 tablespoonfish sauce

Steps

  1. 1

    Grill the eggplant, garlic, shallots, and Anaheim peppers until cooked. Let them cool, then peel off the skin and any charred parts.

  2. 2

    Pound the fresh chili peppers, garlic, and shallots with a little salt until well combined.

  3. 3

    Chop the eggplant and Anaheim peppers, then add them to the mixture and pound until smooth.

  4. 4

    Season with 1 tablespoon fish sauce, 1 teaspoon sugar, 2-3 tablespoons fermented fish sauce, and lime juice. Adjust the taste to your preference for saltiness, sourness, and sweetness.

  5. 5

    Serve with fresh vegetables and pork cracklings for a delicious combination.
