Ingredients

  • Veggies
  • 1/4 cupbeef stock
  • 1lemon
  • 2Onions
  • 1Tomato
  • 1/2 teaspoontomato paste
  • 2 clovesGarlic
  • Spices
  • Salt
  • Pepper
  • 1/2 teaspoonroyco powder
  • 2beef cubes
  • For the chicken marinade
  • 1/2 cupbuttermilk
  • Salt (To taste)
  • Pepper
  • Cayenne pepper
  • Turmeric
  • Ground coriander
  • Ground cumin
  • Garlic
  • Ginger

Steps

1hr 30 minutes
  1. 1

    Cut your chicken into pieces and wash it with lemon or vinegar

    Marinate and let it sit for two hrs or overnight then fry

    Cut up your veggies onions, garlic, tomatoes and set aside

    Add oil to your sufuria then the garlic and onions after they begin to turn golden add in your tomatoes and cover let it simmer on low get for two minutes

  5. 5

    Add a quarter cup of your beef stock in the tomato mixture

  6. 6

    Add in your chicken and let it simmer for about 5 minutes on low heat,adjust your stew by adding your beef stock to your liking

    Serve hot with ugali and sukuma
