Wash your catfish with vinegar and lemon juice to get all the slime off. Wash again with water. Keep aside in a strainer to dry

In a pot, add a little bit of oil and your onions. Sauté for a few seconds. Add your red ball peppers and scotch bonnet and continue to stir

Add seasoning and a small amount of water. Add the fish to the hot pot and stir carefully. If the water will not be enough to cook the fish, add a little bit more. Cook for 5 minutes or until fish is done(note: stirring the fish will make the flesh peel off the bones, so only stir once at the beginning)

When fish is soft, turn off heat and put in a plate. Add some boiled potatoes and serve😋😋
