WHY does anyone get store bought - These are super simple, insanely delicious and you make a whole batch for the price of 4 in the shops. Also NO CHEMICALS

In a stand mixer (or can do by hand) cream together the butter and sugar until paler.

Add egg and vanilla and gentle mix in. Then add everything else (apart from the granulated sugar) stir for 2 mins to evenly combine. Tip into a bowl and put into fridge for 30 mins.

Set over to 175c. I use an ice cream scoop to make even balls. Put sugar into a dish and roll the dough around to coat. Add onto a baking sheet lined with baking paper and cook for 12-15 mins until evenly cooked. You will need to do in batches.

Put onto a cooling rack for at least 45 mins then transfer to a box and keep in the fridge until all gone (up to 2 weeks) - lol like that will even happen :P - enjoy :P
