Gather all the ingredients required for this recipe. Marinate the Aar fish with salt, turmeric, red chili powder, and a little oil.

Heat oil in a pan and fry the fish pieces on both sides. Remove and set aside.

In the same oil, add bay leaves, cumin seeds, cardamom, cloves, and cinnamon. Sauté for10-12seconds..

Add chopped onions and fry for 2–3 minutes until golden.
Add crushed garlic and chopped green chilies. Sauté for a minute. - 5
Then add the ginger-garlic-chili paste and cook on low heat for 1–2 minutes.
Add turmeric, red chili powder, cumin powder, and coriander powder with a little water. Cook well until the oil separates.
Add poppy seed paste and cook thoroughly. - 6
Add salt, sugar, and coconut milk. Mix well and cover. Let it cook for 2–3 minutes.

Once the gravy starts boiling, add the fried fish, slit green chilies, and garam masala powder. Mix gently, cover, and cook on low heat for a few minutes.

When the gravy thickens slightly, remove from heat.
Serve hot with steamed rice for a rich, flavorful Bengali-style fish curry. 🍚🐟
Tips
If the fish is scaled, rubbing a little oil before frying prevents oil splattering
