Ingredients

2 servings
  1. 2 tbsp (30 ml)fresh lime juiced
  2. 1 tbsp (13 g)sugar
  3. 10mint leaves
  4. 1/2 cup (118 ml)soda water
  5. 1 cupice cubes
  6. 80 mlwhite rum and a splash of soda water
  7. 2lime wedges (optional)

Cooking Instructions

  1. 1

    In a sturdy glass, muddle lime juice, sugar and mint leaves to release the mint oil. Add soda water. Pour into a popsicle mould and freeze.

  2. 2

    Place the frozen ice pop in a serving glass with ice cubes. Pour white rum over. Add a splash of soda and decorate with lime wedges as you'd like.
