Sweet and Sour Eggplant pickles
Super easy. Cooked veggies in the microwave and toss with seasoning! You can keep this for 2-3 days in the fridge. Recipe adapted from Miwa Japanese Cooking.
Steps

Cut eggplant lengthwise and finely chop onion.

Place eggplant in a microwave safe dish. Coat evenly with coconut oil. Place onions on top. Microwave on mediums (700W) for 5 mins 30 secs

Mix all seasoning ingredients together. Add it to 2 while mixture is still hot.

Leave to cool. Refrigerate before serving :)
