We get the jaggery from dates ,it has it's own flavour so no need to add any other flavour.

This is a delicious ,traditional ,popular sweet of Bengal.
We get the jaggery from dates ,it has it's own flavour so no need to add any other flavour.
Steps

In a grinder take soaked cashewnuts, almonds, 1/4 cup milk, 1 cup cottage cheese & then grind it to make a smooth paste.

In a wok or kadai take date palm jaggery,switch on the flame & stir it for 1,2 mints on low flame to form liquid jaggery.

Then add the cottage cheese mixture with continuous stirring.Cook on low flame for about 9-10 mints.

First the sandesh mixture will have smooth & molten consistency.

Slowly the moisture would began to dry & the sandesh mixture would start coming together.

Sandesh mixture should have moisture, must not have a dense rubbery texture.

Let the sandesh mixture little warm,then knead the mixture to get a smooth consistency.

Shape them into flatten round balls & with the help of a toothpick make designs on the sandesh.

Press pistachios in the centre on each sandesh.

Enjoy the delicious nolen guder Sandesh which melts in the mouth & tastes really heaven.
