Besan egg curry

Besan egg curry is quick and very unique in taste.
Steps

Gather all the ingredients and keep aside.

Heat oil in a pan and add methi seeds, bay leaf, ginger garlic paste and saute for few seconds.

Add besan and stir continuously till besan turns golden brown.

Now add tomato puree and cook till it leaves oil and then add water as required for gravy.

Add spices salt, turmeric powder and potato.

Cover and cook till potato turns soft and in the end add boiled eggs.

Heat tadka pan add mustard seeds, curry leaves and red chilli powder and add the tasks to curry.

Serve hot with roti and enjoy.
