Khaman dhokla is a very famous snack in Gujarat. Khaman dhokla is a very soft-spongy, easy, less oily, and healthy breakfast. For preparing khaman dhokla there are many variations. But here I had prepared instantly in 30 minutes. It is a very mouth-watering and flavourful dish.
Steps

For preparing batter: Take a mixing bowl and add besan(gram flour), turmeric, asafoetida, ginger-green chilli paste & mix well.

For preparing water: take a bowl to add water, lemon juice/citric acid, salt, and sugar till sugar dissolves stir well all the ingredients.

Now add that prepared water in batter gently and stir well till the batter turns to a medium thick consistency. And keep aside for 10 minutes for rest.

After 10 minutes, once stir well and add baking soda and stir it in one direction for 5 minutes.

Further, take a steamer or cooker or any big pan add water to the bottom. Put stand, close the lid, and heat it for 4-5 minutes. Meanwhile, grease plate with oil and pour prepared khaman dhokla batter. And put it in the steamer. And bake it for 25 minutes on medium flame.

Now, check it with a toothpick it is prepared well or not. (If khaman dhokla is prepared then the toothpick comes out clean). Take out from steamer and keep aside for 5 minutes and cut it.

For preparing to temper: take a small pan and add oil, mustard seed, asafoetida, curry leaves and once crackled then add water, salt, sugar, and turmeric and mix well for 2 minutes. (you can add chopped green chilli). Once tempering is medium hot then add it to khaman dhokla.

Now, khaman dhokla is ready. Sprinkle desiccated coconut, chopped green coriander leaves. And enjoy it with green chutney.
