Ingredients:

Remove the stems from the spinach.

Cut the spinach into thin strips.

Crack 2 eggs into a bowl and beat together with the spinach.

Add a small drizzle of oil to a small skillet.

Pour the egg and spinach mixture into the skillet and cook over medium heat.

Once the bottom is golden, flip it over.

Let the other side brown as well, then serve.

Cut into triangles like tortilla chips.

Heat the green salsa in a bowl and pour it over the triangles.

Add sour cream and panela cheese to taste.

Add avocado.

Garnish with onion and cilantro.
