One of the most popular dinners in Mexican homes? Quesadillas! I never get tired of them, but I do make lots of variations. Today's version is a relaxed Friday night dinner, perfect with a cold beer. (How much more northern Mexican can you get?!)

One of the most popular dinners in Mexican homes? Quesadillas! I never get tired of them, but I do make lots of variations. Today's version is a relaxed Friday night dinner, perfect with a cold beer. (How much more northern Mexican can you get?!)

Heat a griddle or skillet.

Add the steak and cook to your desired doneness. I cooked it medium. (I didn't add salt because the cheese and tortillas add enough flavor.)

Once the steak is cooked, remove it from the griddle and set aside.

Warm the tortillas on the same griddle. I flipped them just once because my griddle was very hot.

Once the tortillas are warm, add the cheese and steak, dividing them evenly among the tortillas.

Fold the tortillas in half and cook until the cheese melts and the tortillas are toasted. Serve with salsa roja or your favorite salsa.
