Ingredients

2 Hours
4 servings
  • (1) Full rack of St. Louis ribs. I get the pre-seasoned ribs from Costco
  • Seasoning of your choice. I use a combination of Montreal steak seasoning (which gives me some pepper) and Pork or Chicken rub
  • (3) Tbsp. Salted sweet cream butter
  • (2) Tbsp. Brown sugar
  • (1) Tbsp. Honey
  • (1 Tbsp. Apple cider
  • BBQ sauce of your choice

  1. 1

    Heat the Kamado Joe/Green Egg to 275 degrees. Add some smoke chips. Grill grate should be on the top rack. Make sure the grill is heat soaked at 275 degrees.

    Season the ribs with the seasoning that was prepared. Use as much as you like.

  3. 3

    Cut the rib rack in half (OK to keep full rack if using a large Kamado Joe/Green Egg). Put the prepared ribs on the rack, meat side up. Close the lid.

    Cook at 275 degrees for 1 hour. At 30 min, spray with apple cider.

  5. 5

    At 50 min, spray with apple cider again.

  6. 6

    At 1 hour remove the ribs and put them on 2 pieces of heavy duty foil.

  7. 7

    Melt the butter, brown sugar, apple cider and honey in a small pot on low heat. Once melted together, spread liberally over the ribs, top and bottom.

    Close up the foil and put back on the grill for 45 minutes turning once during that time.

  9. 9

    At 45 min. remove the ribs, open the foil and baste them with the BBQ sauce of your choice.

  10. 10

    Place ribs back on the grill (no foil) and cook over direct heat (still at 275-300 degrees) for 15 minutes until the BBQ sauce has glazed. Be careful not to burn them as the the grill will probably flame up. Its ok to get a light char.

    Remove, cut and serve.

Just wow. Info on ‘fast ribs’ is surprisingly hard to find out there, but this guidance was spot-on. We had awesome ribs in 2 hours using a little Traeger at 300F. Honestly, I prefer this ‘peel off the bone’ result better than overdone slow-cooked ribs. The meat was tender and the ribs held their shape. Best of all, it was quick. This approach is a winner.
