Cooking Instructions

Wash the red peppers and remove the caps from the peppers and the seeds and cut them into quarters, steam for 20-30mn then remove from heat and let cool.

Divide into three quantities: 1 the first add garlic and thyme and put it in a chopper until you get a smooth paste and pass them through a sieve and then put them in a pan with olive oil and bay leaf and cook until the water evaporates.

Over a low heat until the water has evaporated most of the harissa and set aside and let cool.

2 quantity: add a tablespoon of garlic and the spices of your choice: a teaspoon of cumin and ginger and coriander and chopped with a chopper to have a smooth paste and pass it through a sieve then put it in a frying pan with 5 tablespoons of olive oil over low heat until almost all the water ovoperation and set aside and let cool.

3 quantity: add a tablespoon of garlic and 1/4 liters of lemon juice and a tablespoon of salt and chop it with a chopper to obtain a smooth paste and pass it through a sieve then put it in a pan with 5 tablespoon of olive oil over low heat until the water has evaporated and remove and set aside and let cool.

After place them in sterilized glass jars and put a layer of olive oil at the end and close well and put in the fridge.
Serve them with sandwiches or add them to sauces or accompany them with fries or grilled chicken and shrimp,,,,,,,,,,,

This is one of my favourite types of hot sauce, which originated in Tunisia and variants of it are found throughout North Africa and the Middle East. It is apparently rather simple to make by hand, and comes out as good as what I find in restaurants. The chilli peppers I used to make mine are fresh Philippine siling labuyo peppers, which are rather strong at 80,000 to 100,000 Scoville Heat Units, roughly the equivalent of a habanero chilli, so I used only three of them. Baklouti or Serrano peppers are supposedly used for this (~3000 SHU) but I've never seen them. I suppose you can use any chillis you like, but if you use dried chillis you should probably soak them in water first.
