I love blueberry yogurt!
I'm always thinking of slightly different ways to eat it, and made this mousse.
Adding the lemon juice just before whipping the cream speeds up the whipping process!

I used a portion of unsweetened single servingsof yogurt.

Put the frozen blueberries in a bowl and sprinkle with sugar. Cover the bowl with plastic wrap, microwave at 500 W for 1.5 minutes. Once done, mix well and leave to cool.

Next, add the cream and lemon juice and and whip until stiff peaks form. (Since it's a small amount of cream, just use a small whisk.)

Add the yogurt to the Step 3 mix, and mix to combine. Then add the blueberries and sugar mix from Step 2 and, again, mix until combined.

Pour into serving dishes, leave to chill in the refrigerator for about an hour, and they're ready to serve! You can put blueberries on top to make it fancier.

It's delicious eaten on top of crackers or bread.

If you don't want to use heavy cream, you can use whipped cream instead. If you do, add about 25 g of yogurt to the recipe.
