For the New Year's Feast: Burdock Roots with Cashew Nuts

I was served a dish of burdock roots with some nuts at a soba noodle restaurant, so I tried to recreate the dish at home using nuts as the main ingredient.

Peel the burdock root if you prefer. If you soak the burdock root thoroughly to remove any bitterness, the nuts will taste really nutty and delicious! You could also add nuts at the end if not serving this immediately. Recipe by Mawaru7

Ingredients

4 servings
  1. 1/2Burdock root
  2. 20to 25 Cashew nuts (or almonds )
  3. 1and 1/2 tablespoons ☆Ground white sesame seeds
  4. 1 tbspMentsuyu
  5. 1/3 tsp☆Sugar
  6. 1 tspVinegar (to remove bitterness)

Cooking Instructions

  1. 1

Scrub the burdock roots well with a stiff brush to remove the dirt. Chop into 5 cm pieces, then slice into fourths.

  2. 2

Put some water and vinegar into a bowl. Soak the burdock roots to remove bitterness. After 5 to 6 minutes, drain into a colander or a sieve.

  3. 3

Boil the burdock roots in a pan. Turn the heat to medium when the water starts to boil. I would say, cook for approx. 5 to 6 minutes.

  4. 4

When done, drain into a colander or a sieve.

  5. 5

Put the cashew nuts into a plastic bag. Pound with a rolling pin to crush.

  6. 6

Now put the cashew nuts and condiments marked ☆ into a bowl. Then add the burdock roots and mix together to finish. I took this photo after adding the cashew nuts and sesame seeds.

  7. 7

The cashew nuts may be slightly salted. Taste and adjust the amount of seasonings depending on your dipping sauce, especially if you're using unsalted cashews.

  8. 8

I make my own mentsuyu by the way. Storebought mentsuyu is usually concentrated and need to be dliuted. I also used light brown sugar. Use your preferred flavoring ingredients.
