  1. 1 3/4 cupsbread flour (about 230 grams)
  2. 1/4 cupwhole wheat flour (about 30 grams)
  3. 1/4 cuprye flour (about 30 grams)
  4. 1 teaspoonsea salt (about 5 grams)
  5. 1 cupwater (about 230 grams)
  6. 1 teaspoonyeast (about 5 grams)

    Mix the bread flour, whole wheat flour, rye flour, salt, water, and yeast evenly.

  2. 2

    Knead for 3 minutes, then let it rest for 30 minutes.

  3. 3

    Fold and knead the dough 3-5 times, letting it rest for 20 minutes each time.

  4. 4

    Preheat the oven for 20 minutes, then place the dough inside.

    Set the oven to 450°F (230°C) and bake for 20 minutes.

    Remove the lid and set the oven to 410°F (210°C) and bake for another 20 minutes.
