Refreshing ☆ Lemon Herb Roast Chicken

I came up with this recipe as I had lots of lemons and wanted to cook it with chicken.
It's a perfect combination with herbs, so I made this lemon and herb roast chicken ♪
● I put 1/2 lemon but you can still enjoy the refreshing taste by 1/4.
● I used the handy dried thyme and rosemary but you get a better flavor with fresh herbs. Recipe by Soyokaze

Cooking Instructions
- 1
Put chicken skin side down. Cut off the thick parts and butterfly. Cut into 5 cm cubes. Cut into big pieces as they shrink once cooked.
- 2
Sprinkle salt and pepper to Step 1.
- 3
Heat olive oil in a frying pan and fry the chicken skin side down (over medium high heat).
- 4
When skin has browned, flip the pieces over. Sprinkle white wine, thyme, and rosemary. Put lemon slices on top and cover with a lid to steam (over low heat).
- 5
Pierce the meat with a chopstick to check for doneness. When the juices run clear, remove the lid. Add butter and lightly toss. Done.
- 6
Adjust to taste with salt. I don't use salt as you get the rich taste from butter and acidity of lemon.

The method I’ve come to rely on over the last several years. I usually make this in two steps. I prepare the chicken in the morning and throw in the fridge to allow the skin to dry out before cooking in the evening. But it works just fine if you prep the chicken right before you pop it in the oven too. The O’Lius -

This is a simple way to roast chicken that makes the meat aromatic and delicious! Lately for Thanksgiving & Christmas, I've been roasting chicken instead of big turkeys, simply because I don't need to feed so many people (not to mention I have a tiny oven). Simple, Easy, Delicious Lemon Garlic Roast Chicken Simple, Easy, Delicious Lemon Garlic Roast Chicken
Lots of people go to great lengths and expense to learn how to make a perfect whole roast bird. But unless I want to make a presentation of carving, I prefer the result of roasting individual drums, thighs, whole wings and half breast pieces (breast meat cooks much more quickly than dark) - lots of crispy chicken skin, great flavor, uniform cooking, and I get all the carving mess out of the way on the front end.If you're tempted to ask how to make a boneless, skinless version of this dish, don't. There is no joy in roast chicken without the flavor from the bones and the indulgence of perfectly browned and crispy chicken skin. :)The recipe takes about 2.5 hours TOTAL, but active time is more like 20 minutes. (10 to 15 minutes to season, 1 to 5 hours to marinate, 45 minutes to roast.) x
