You Can Make This At Home! Ramen Noodles with Soy Sauce Flavored Soup

Store-bought ramen sauce just seems to have so many additives...

- Make sure to prepare the toppings beforehand so that the noodles don't soften too much.
- My ramen bowls are a bit small, so increase the amount of soup when using a bigger bowl. 1 1/3 cloves/knobs of garlic/ginger, 3/5 tablespoon doubanjiang, 4 cups water; 1 1/3 teaspoons each of Chinese soup stock granules, sake, salt, and sugar; a little less than a teaspoon of Japanese dashi stock, 2 1/2 plus tablespoons of soy sauce. (I calculated this by multiplying the amounts in the recipe by 4/3.) Recipe by Keyua

Ingredients

2 servings
  • 2servings Store-bought ramen noodles
  • The soup:
  • 1Sesame oil
  • 1 clove/ 1 knob Garlic and ginger
  • 1/2 tspDoubanjiang
  • 2 1/2 cup○ Hot water
  • 1. ○ Chinese soup stock
  • 1 tspof each Sake, salt, sugar
  • 2/3 tsp○ Dashi stock granules
  • 2 tbsp○ Soy sauce
  • 1Pepper, Chinese red chili oil

Steps

  1. 1

    Heat water for both the noodles and soup. Finely chop the garlic and ginger. Cut the topping ingredients and have them ready to go.

  2. 2

    Heat a pan, add sesame oil, minced garlic, ginger, and doubanjiang, and sauté.

  3. 3

    Once the garlic has produced an aroma, add the ○ marked ingredients, season to taste, and strain.

  4. 4

    Boil the noodles until slightly hard, transfer to bowls, and pour the soup from Step 3.

  5. 5

    Add red chili oil if you like, plus your favorite toppings, and enjoy!
