First, place a large pot or deep pan on the stove. Add water and set a stand or small bowl inside. Bring the water to a boil to create steam.

In a mixing bowl, combine the semolina, chickpea flour, turmeric powder, salt, and oil. Mix well.

Add the yogurt to the mixture and stir to make a thick batter. Add the green chili and ginger paste. Cover and let the batter rest for 10 minutes so the semolina can absorb the moisture and expand.

After 10 minutes, check the batter. If it’s too thick, add a little water to thin it out, but don’t make it too runny.

Once the water is steaming, add the packet of fruit salt (Eno) to the batter just before steaming. Mix well. Grease a round pan or plate with oil, pour in the batter, and spread it evenly. Sprinkle a little red chili powder on top if desired.

Place the pan with the batter onto the stand in the steaming pot. Cover with a lid and steam for 30 minutes.

After 30 minutes, check if the dhokla is cooked by inserting a knife. If it comes out clean, it’s ready. If not, steam for another 5 minutes.

For the tempering, heat oil in a small pan. Add mustard seeds and green chilies, and let them splutter. Pour this tempering evenly over the dhokla.

Your delicious, tangy, and spicy dhokla is ready to eat. It’s a tasty and healthy snack that everyone will love.
