I made this paella with ingredients I had in the fridge. This time, I used chicken, shrimp, scallops, and a type of mollusk called chaguacure.

I made this paella with ingredients I had in the fridge. This time, I used chicken, shrimp, scallops, and a type of mollusk called chaguacure.
Steps

Heat olive oil in a paella pan. Sauté the chicken, shrimp, scallops, and chaguacure with minced garlic for a few minutes.

Add about 1 pound (500 grams) of paella rice and stir for a bit, then pour in the chicken broth.

Cover with aluminum foil and cook until the rice is perfectly done. Let it rest for a few minutes before serving. Enjoy!
