Heat oil in a Kadai fry few curry leaves 1/2 tsp mustard seeds saute it for few seconds. Then add brinjal fry for 1 minutes.

Then add haldi powder, red chilli powder, jeera powder, salt, dhania powder and 1/2 tsp ginger, garlic and green chilli paste. Mix.,....Add left over masala in katori add water and pour to the curry... Saute it for few minutes.

Add tomato puree. Mix....it properly till the raw smell of masala goes off. Add water as needed.

Cover and cook till the brinjal become tender. If you want gravy then add little water. It is up to you. Once it is done. Sprinkle chopped coriander leaves. Switch off the flame.

Transfer to a serving bowl. Garnish with coriander leaves and Ready to Serve....with hot....chappati
