Cashew Butter Cookies

Doing a little preholiday baking today. I never even had these BEFORE I lost my cake privileges lol this is the ole 3 ingredient peanut butter cookies but I doubled it and used cashew butter instead. I also balanced out the sweet with some salt and put a copious amount of vanilla in as well. I like big food so I use a bigger scoop than my cookie scoop. If you use a regular cookie scoop you’ll yield a lot more cookies.

Preheat your oven to 375. In a mixing bowl combine all the ingredients. I do it in a stand mixer so I can thoroughly mix the cashew butter’oil back into it from the jar.

Drop cookies 2 inches apart on parchment lined baking sheet. Bake about 8-10 minutes for smaller cookies and 12-14 minutes for the bigger cookies. Allow to cool completely and set up.
