Good soup generally takes a long time to develop flavor, but we don't have time for that. This version is easy, quick and flavorful.

In a pot start to crisp your bacon, halfway through add the onions

Once the bacon is crisped and the onions sautéed, add your potatoes.

Add your chicken stock, herbs and bring to a boil
- 4
Add potato flakes and simmer until soup thickens. (This will be almost immediately) **I used roasted garlic flavored**

Add your cream and simmer for another 5 mins.

Garnish with cheese, scallions, croutons..whatever you want and enjoy!
