  1. 4-5fresh chilies, any type you prefer, 1 tablespoon
  2. 5 cloveslarge garlic, peeled
  3. Salad greens or any fresh vegetables you like
  4. 2 tablespoonslime juice
  5. 1 tablespoonfish sauce
  6. 1 teaspoonstevia sugar
  7. 7 ouncespork tenderloin, pork shoulder, or pork loin
  8. For marinating the pork
  9. 1 tablespoonsoy sauce
  10. 1 tablespoonoyster sauce

    Marinate the pork and refrigerate.

    Make the dressing by combining chilies, garlic, lime juice, fish sauce, and stevia sugar. Adjust the taste to be predominantly sour with a hint of saltiness, then set aside.

    Blanch the marinated pork in hot water, using just a little water to prevent the marinade from being washed away. After blanching, set the pork aside.
