Red curry is very popular in Thailand. More amount of red chilli used in making this red curry. While rich coconut milk stabilize the spices taste. You can use any veggies which is easily available .

Red curry is very popular in Thailand. More amount of red chilli used in making this red curry. While rich coconut milk stabilize the spices taste. You can use any veggies which is easily available .
Steps

For making red paste : Firstly, soak dry red chillies in warm water and drained. Combine all the ingredients like garlic, onion, ginger, lemongrass salt, green coriander, cumin seeds, coriander seeds, water and blend in a mixer to a smooth paste.

For making red thai curry : take a mixing bowl add coconut milk and corn flour and combine well.

Heat oil in the pan, add red curry paste and saute it for 2-3 minutes. Further mix onion, boiled corn, bell peppers, carrots, french beans and add salt. stir well all the ingredients for 4-5 minutes.

Now, add coconut milk -cornflour mixture and simmer for 2 minutes. Afterwards add soy sauce, black pepper powder and again simmer it for 10 minutes till curry thickens. garnish it with basil leaves, coriander leaves. Serve it with steamed rice.
