Ingredients

40 minutes
2 peoples
  • For the thai red curry paste :
  • 5-6red chilli (soaked in warm water for 15 minutes)
  • 4-5 clovesgarlic
  • 1chopped onion
  • 1 tspchopped ginger
  • 2 stalkslemongrass
  • 1/4 cupgreen coriander
  • 1 tbspcumin seeds
  • 1 tbspcoriander seeds
  • 1/2 tspsalt
  • as neededWater
  • For making veg red curry:
  • 2 tbspoil
  • 1chopped onion
  • 1/2 cupboiled sweetcorn
  • 1/2 cupchopped carrot
  • 1/2 cupbell pepper k(red, yellow, green)
  • 1 cupcoconut milk
  • 1 tbspcorn flour
  • 1/2 tspsoy sauce
  • 2 tbspbasil leaves
  • 1/4 cupfrench beans
  • as per tasteSalt
  • 1/4 tspblack pepper powder

Steps

40 minutes
  1. 1

    For making red paste : Firstly, soak dry red chillies in warm water and drained. Combine all the ingredients like garlic, onion, ginger, lemongrass salt, green coriander, cumin seeds, coriander seeds, water and blend in a mixer to a smooth paste.

  2. 2

    For making red thai curry : take a mixing bowl add coconut milk and corn flour and combine well.

  3. 3

    Heat oil in the pan, add red curry paste and saute it for 2-3 minutes. Further mix onion, boiled corn, bell peppers, carrots, french beans and add salt. stir well all the ingredients for 4-5 minutes.

  4. 4

    Now, add coconut milk -cornflour mixture and simmer for 2 minutes. Afterwards add soy sauce, black pepper powder and again simmer it for 10 minutes till curry thickens. garnish it with basil leaves, coriander leaves. Serve it with steamed rice.
