Ingredients

1 hour 30 minutes

  1. 2medium potatoes
  2. 1 quartvegetable broth
  3. 1 packchorizo, blood sausage, and bacon
  4. olive oil
  5. 1zucchini
  6. 1medium red onion
  7. 3 clovesgarlic
  8. salt
  9. 2small carrots
  10. 1 cancooked lentils
  11. sweet paprika
  12. black pepper

    Chop the onion into small cubes and mince the garlic. Cut the potatoes in a way that they break apart slightly when cooked to release their starch.

    Sauté the onion and after a minute, add the garlic. Sauté everything together. Once the onion is translucent, add the carrots and zucchini, and continue to sauté. Once they are cooked, add the chorizo cut in half (I do this because only two people eat the chorizo) and the bacon in cubes (this is to taste).

    Cook for about 5-8 minutes and add the potatoes. Shortly after, add the sweet paprika, a bit of ground black pepper, and salt.

    Cook for a few minutes, and before the paprika burns, add the broth.

    Let it simmer for 30 minutes over medium heat, lowering the heat if necessary to thicken the broth. Drain the canned lentils and add them to the pot.

    Let everything simmer together for another 20 minutes. And that's it, our lentils are ready. My 6-year-old daughter loves them, and so do I.
