Ingredients

Serves 4 servings
  • 2.2 lbsmixed meat (pork, beef, steak, stew meat, ribs, bones) (about 1 kg)
  • 2red onions
  • 2 clovesgarlic, minced
  • 3 1/4 cupstomato purée (about 750 ml)
  • 2 tablespoonspaprika
  • 1 teaspoonlard
  • Black pepper
  • 1 slicecured coppa, cut into very small pieces
  • 1/2 cupvegetable broth (about 100 ml)

    Cut the meat into small pieces and remove the meat from the bones. In a large pot, sauté the garlic and onion in a small amount of lard.

    Add the vegetable broth and the bones.

    Separately, sear or grill the meat for a few minutes, then deglaze with white wine.

    Add the tomato purée, then the meat. Cook over low heat for 2 hours, then let it rest and cook for 1 more hour the next day. Remove the bones and shred any remaining meat.

    Serve the next day with potato gnocchi or pasta.
