A pancake with the goodness of freshly grated cucumber, shredded spinach and curd served along with colorful Greek salad with feta cheese which has an excellent source of nutrients like calcium and protein.

Put the grated cucumber into a bowl. Add salt, pepper powder, and red chili powder to it and let it rest for 10 minutes.

After 10 minutes squeeze out the water from the grated cucumber and place it in another bowl.

Now add shredded spinach to the squeezed cucumber.

Now add curd.

Now add the rice flour.

Now add turmeric, red chilli powder, black pepper powder and salt.

Mix all the ingredients and gradually add water to form a batter-like consistency and let it rest for 10 minutes.

After 10 minutes heat 1 tsp olive oil in a nonstick pan and add 1 tablespoon of the prepared batter. Flip and cook till it becomes crisp and golden brown in color. Repeat the process to make more pancakes.

To make the Greek salad, mix the diced cucumbers, onion, tomatoes, red bell pepper, and olives in a bowl. Add a pinch of salt. Now add pepper powder. Drizzle with olive oil.Top.it with crumbled Feta cheese. Greek Salad is ready to serve.
