Muthiyas are very popular in Gujarat. It derives its name from the gripping action on the dough to shape it. There are many ways to make it by varying the ingredients used in them and shaping them differently. Using greens, herbs and grated vegetables it is very flexible and lends itself to a myriad of ways to make it. One of the commonest ways is to use a combination of wheat flour and chickpeas flour.
Here is a gluten-free version without oil. It makes for a great evening snack. I make it different style in different shape. There is a lot of healthy food for kids. Because those who do not eat lauki will see the donut of such made lauki and will feel special. There are many vegetables in this handful of lauki. Which is a nutritious and health oriented food. And these donuts are made from steam.

First add pieces of bottle gourd in a mixer jar and prepare a fine paste. Wrap it in a cotton cloth, squeeze out all the water and let it dry.

First of add amall sooji in a large bowl and also add wheat flour and besan and mix all the flour well.

Now add lauki paste, grated onion, grated carrot, ginger paste, salt, chopped green chillies, white sesame, turmeric powder, cumin seeds, red chilli powder, sugar, carom seeds,, asafoetida, baking soda and mix it in this flour.

Then add green coriander, 2 tbsp oil, and lemon juice, mix well and make dough without adding water.

Now add 1.5 cup water in the steamer and heat for 10 minutes. Then grease a large dish with oil. Then apply oil on the hands and take a little mixer to shape the mini donut.

Now wrap lid in a steamer with a cloth and steam donut it on a medium gas flame for 20 minutes.

Now heat oi in a pan, then add mustard seeds, sweet curry leaves and sesame seeds to the pan for a Tempering. Then mix the donut in it and roast it evenly for 1 to 2 minutes.

Now this Lauki Mini Donut Muthia is ready to serve. Serve this muthiya with tomato ketchup and lauki juice.
