This recipe is inspired from famous Boracay Philippines Calamansi muffin. Since I also love Matcha so I decided to create this 2 flavor in 1.
Calamansi is a Philippine lime or lemon.

Cooking Instructions

Preheat oven at 350°F

Sift flour & baking powder.

Combine with salt & matcha powder, set aside
- 4
In a separate bowl hisk butter & milk, before adding egg
- 5
Once egg is combined thoroughly add milk and calamansi juice. Mix

Add dry ingredients and calamsi rind. Mix but do not over mix the batter
- 7
Pour mixture in a prepared muffin pan
- 8
Baked for 20 to 23 minutes

I wanted to make blueberry muffins, but I didn't have exactly everything typically needed (especially the amount of milk).I came up with this using the juices from my frozen blueberries as part of the liquid needed for making the batter and also didn't want to take the time to separate into muffin cups. So, this is what we get.It has a muffin sort of crumble to it, but it's really no too "muffiny" so I'm just calling it a "bake".
