I wanted something made with soy beans that would satisfy my boyfriend!

Ingredients

4 servings
  • 200 gramsCooked soy beans
  • 1/4Onion
  • 3cm Carrot
  • 5Shiso leaves
  • 3 tbspKatakuriko
  • 1 1/2 tbspSoy sauce
  • 13 cm knob Grated ginger
  • 1 tbspGround sesame seeds
  • 1 tspSugar
  • 1 dashSalt and pepper
  • 1 dashNutmeg
  • 1 tspJapanese dashi stock powder
  • Japanese-style mushroom sauce
  • 1 bunchMushrooms of your choice
  • 150 mlDashi stock
  • 2 tbspSoy sauce
  • 1 tbspMirin
  • 1 tbspSugar
  • 1 tbspKatakuriko dissolved in water
  • 1Green onions or scallions

Steps

  1. 1

    Crush the cooked soy beans with your pestle & mortar or in a food processor.

    Chop the onion and carrot finely and microwave for two minutes. Julienne the shiso leaves.

  3. 3

    Put all the ingredients except the sauce ingredients into a bowl and mix together.

    Shape the mixture into small balls and fry in a frying pan with oil until crispy and golden on both sides.

    In the same frying pan stir-fry the mushroom quickly and add the dashi stock, soy sauce, sugar and mirin.

  6. 6

    Check the taste and if it is alright, add the katakuriko dissolved in water to thicken the sauce. Sprinkle with chopped green onion and pour over the burgers.
