My parents sent me eggplants that they grew, so I used them to replicate a dish my mother used to prepare.

Ingredients

2 servings
  1. 2Eggplant (slim Japanese type)
  2. 1 dashRed chili pepper
  3. For the sauce
  4. 1 tbspSoy sauce
  5. 1 tbspVinegar
  6. 1 tbspMirin
  7. 1/2 tbspSesame oil
  8. 1 tspDoubanjiang
  9. 1 tspSugar
  10. 1/2 stalkJapanese leek
  11. 1 cloveGarlic
  12. 1thumb's worth Ginger

Cooking Instructions

    Mince the Japanese leek, garlic, and ginger, put them in a bowl, add the rest of the sauce ingredients, and mix well.

    Chop the eggplant into 1.5 cm rounds, then sauté in heated vegetable oil.

  3. 3

    When browned, transfer to a paper towel to absorb excess oil, then immerse in the sauce from Step 1.

    Thoroughly coat the eggplant, allow it to cool, then store in the refrigerator to chill.

  5. 5

    Transfer to a serving dish, garnish with finely chopped red chili pepper, then serve.
